Casserole Recipes for Busy Nights

It doesn’t matter what time of year it is, life is just plain busy. In the scheme of life, I haven’t been a mom that long, however I have started a list of “go-to” casseroles that I can make ahead for those busy weeknights that my one year will actually eat.

Tater Tot Casserole

Ingredients:

1 lb of ground beef

1 can of cream of mushroom soup

1 can of green beans

½ bag of tater tots

1 cup of cheese of your choice

Directions:

Step 1: Brown your ground beef and drain

Step 2: Mix the ground beef with the cream of mushroom soup and green beans

Step 3: Add the mixture to a 9×13 glass dish

Step 4: Top the mixture with tater tots

Step 5: Top the tater tots with cheese

Step 6: Bake for 35-45 minutes at 375 degrees

Step 7: Let sit for five minutes and then serve

Add salt and pepper to your preference.  This is a dish you can make ahead and bake it when you are ready.

Chicken, Green Beans, and Potato Casserole

Ingredients:

1 chicken breast (boneless and skinless)

3 -4 small to medium potatoes (I prefer red potatoes)

1 can of green beens

1 packet of ranch

1 stick of butter

Directions:

Step 1: Chop the chicken breast into small pieces

Step 2: Chop potatoes into small pieces

Step 3: Layer the ingredients side-by-side in a 7×11 glass container

Step 4: Sprinkle the ranch of all the ingredients

Step 5: Melt butter and drizzle over ingredients and ranch

Step 6: Bake for 45 minutes at 375 degrees

This is a dish you can make ahead and bake it when you are ready. Watch to see if 45 minutes is too long. You don’t want your chicken to be dry.

Chicken Pot Pie

Ingredients:

1 pre-package pie crusts (comes with two)

1 package of potato soup mix

1 package of frozen mix vegetables

1 chicken breast

Directions:

Step 1: Dice your chicken and cook all the way through

Step 2: Make the soup as the package states

Step 3: Steam the mix vegetables

Step 4: Combine ½ the soup mix, vegetables, and chicken

Step 5: Place one of the pie crust in the bottom of a pie pan

Step 6: Add the combination mixture to the pie crust

Step 7: Place the second pie crust on top of the mixture and pinch the edges together

Step 8: Make two slices in the middle of the top crust

Step 9: Bake at 375 degrees for 60 minutes

You will have extra soup so you may want to make an extra pot pie and freeze.
