Game Day Potluck Recipe: Lazy Cookie Brownies

It is football season again! This usually means there are game days events and work potlucks to bring everyone together to cheer on your favorite team. Jess and I love this time of year. To me, it is like pre-Thanksgiving. Everyone comes together to celebrate and enjoy great food.

This year for my work potluck I decided to try a new recipe: Lazy Cookie Brownies. I’ve seen this recipe around online a few times. It is a great alternative if you only have cake mix instead of regular brownie boxed mix.

I chose to follow this recipe from Normal Cooking – “Lazy Cake Cookies” for my brownies. Normal Cooking has some great, real-life recipes so if you like this one you should try out some more.

The recipe is super simple!

Ingredients:

1 box yellow/white cake mix
2 eggs beaten
5 Tbsp melted butter
2 cups M&M/mini chocolate chips

Directions:

Preheat oven to 350 degrees F.
Mix together all ingredients and spread into a greased 9×13 pan.
Bake for 20 minutes.

One thing to note: Use the right sized pan. My brownies turned out more cake-like because I went rogue and used the wrong pan. The pan size matters.
